What Makes This Special
This recipe integrates a pumpkin shortcrust dough for mooncakes, using a professional lamination method more common to western pastry, with a spiced red bean filling tailored for autumn harvest. The result is a crisp, flaky shell with a strong seasonal profile: pumpkin, warming spices, and burgundy red bean.
Ingredients
Every ingredient serves a dual role: structure and flavor. The pumpkin adds both color and moisture. Butter and lard control flake and snap. Freshly ground spices define the autumn character. The filling must be smooth and deep-colored; use red beans that yield a burgundy hue.
For the Pumpkin Shortcrust Dough
- 250g cake flour: Protein content must be low. This limits gluten, producing a tender shell.
- 50g pumpkin puree: Steam pumpkin, drain, and dry to prevent excess water.
- 100g unsalted butter, cold: For lamination and flake.
- 40g lard, cold: Lard differs from butter; it creates a distinct melt and flake.
- 60g caster sugar: Fine granules dissolve quickly.
- 1.5g fine sea salt: Balances and strengthens gluten slightly.
- 2g five-spice powder, 1g cinnamon, 0.5g clove: Freshly ground maximizes aromatic compounds.
- 50ml cold water: Hydrates the dough; temperature keeps fat solid.
For the Filling
- 350g red bean paste: Should be thick, not flowing. Burgundy color only.
For Egg Wash
- 1 egg yolk, 10ml milk: For color and light gloss.
Instructions
Step 1: Prepare Pumpkin Puree
Steam pumpkin until very soft. Spread on clean towel and squeeze gently until barely moist. Too much water ruins dough structure. Cool to room temperature.
Step 2: Make Dough Base
Combine flour, sugar, salt, five-spice, cinnamon, and clove in mixer bowl. Add cold butter and lard in small cubes. Paddle on low until mixture looks like coarse sand, with pea-sized lumps. Add pumpkin puree and mix until just incorporated. Drizzle in cold water while mixing on low. Stop when dough forms clumps. Do not overwork—gluten development must remain minimal for flakiness.
Step 3: Rest and Chill Dough
Turn out onto plastic wrap. Press into a rectangle 2cm thick. Wrap tightly. Chill for 45 minutes. This re-solidifies the fat and relaxes gluten.
Step 4: Laminate the Dough
Roll dough on lightly floured surface to 25x40cm rectangle. Fold one third over, then other third on top (letter fold). Rotate 90 degrees. Repeat rolling and folding two more times, chilling 20 minutes between each fold if dough softens. Lamination builds layers for the final mooncake shell.
Step 5: Divide and Shape Filling
While dough chills, portion 350g red bean paste into 12 balls (approx. 29g each). Roll each into a smooth sphere. Keep covered to prevent drying.
Step 6: Portion and Roll Dough
Cut dough into 12 equal pieces (about 42g each). Roll each into a ball, then flatten to a 9cm round. Work quickly; warmth softens the fats and destroys lamination.
Step 7: Enclose Filling
Place red bean ball in center of dough round. Wrap dough around filling, sealing at base. Pinch to seal; seam must be tight to prevent rupture during baking. Place seam-side down on tray.
Step 8: Shape and Decorate
If using a mooncake mold, dust lightly with flour. Press each ball into mold and release onto parchment-lined tray. If not, flatten gently to a 2.5cm thick disc. Optionally, brush with water and sprinkle with sesame seeds.
Step 9: Egg Wash
Beat egg yolk with milk. Brush a thin, even layer over tops. Avoid drips down sides, which cause uneven color.
Step 10: Bake
Preheat oven to 185°C (fan 175°C). Bake for 21-23 minutes, rotating tray halfway. Shell should be crisp and lightly golden. If color is uneven, tent with foil for final 5 minutes.
Step 11: Cool and Cure
Cool completely on wire rack. Mooncakes are best after 6-8 hours rest; crust will soften slightly and flavors blend.
Pro Tips
- Work cold: If the dough gets sticky or greasy, chill immediately to prevent lamination failure.
- Red bean paste texture matters: Too wet and the filling breaks the shell, too dry and it cracks.
- Use fresh spices: Pre-ground spice lacks volatile oils needed for a strong autumn profile.
Troubleshooting
Shell cracks in oven? Your dough was overworked or too dry. Next time, stop mixing as soon as it comes together and check pumpkin moisture.
Fat leaks during baking? Fat was too warm during lamination. Keep dough and room cold; chill between every fold if needed.
Variations
- Replace red bean paste with sweetened black sesame for earthiness.
- Use kabocha or butternut pumpkin for a deeper orange shell.
- Blend 10% whole wheat flour into the dough for nutty flavor and rustic appearance.
Storage
Store in airtight container at room temperature for up to 4 days. The shell softens slightly over time; texture remains stable. Do not refrigerate, as this accelerates staling.
