Instructions
Step 1: Blend Spices

Step 2: Mix Dough
In a mixing bowl, combine flour, yeast, salt (on opposite sides of bowl), and brown sugar. Add lukewarm water and mix with a dough scraper until shaggy. Add softened butter and knead until combined. If using stand mixer: 3 minutes low, 5 minutes medium. By hand: 10 minutes. The dough should be smooth, elastic, and tacky. Kneading creates gluten strands, necessary for structure and swirl integrity.
Step 3: First Rise
Shape dough into a ball. Place in lightly oiled bowl, cover, and let rise at room temperature (21–23°C) for 60–75 minutes or until doubled. Gas forms in gluten network, expanding dough.

Preheat oven to 220°C (fan 200°C). Brush loaf generously with copper wash. Score top with a sharp knife—one deep slash across centre. Bake 15 minutes at 220°C, then reduce to 190°C (fan 170°C) and bake another 25–30 minutes. The initial high heat sets oven spring and colour; reduction prevents burning.
Step 9: Cool
Transfer to wire rack. Cool at least 1 hour before slicing. If sliced hot, crumb will gum and swirl will not set.
Pro Tips
- Do not skip kneading; under-developed gluten will break the swirl.
- Evenly distribute the spices or the swirl will be patchy and harsh.
- The copper wash must be well-emulsified for a uniform crust.
Troubleshooting
