Instructions

Step 1: Roast Pumpkin (Day 1)

  • Spread on lined baking sheet. Roast for 35–40 min until deeply colored, edges caramelized. This drives off excess water, concentrating flavor and color.
  • Cool. Mash or purée until smooth. Weigh out 200 g purée for dough (reserve extra for another use).

Step 2: Reduce Burgundy for Salt (Day 1)

  • In small saucepan, simmer 200 ml wine over medium heat until reduced to 40 ml (about 20 minutes). You concentrate flavor and color.
  • Cool. Spread 60 g coarse salt on parchment. Drizzle wine reduction over, mixing with fork. Dry at room temp overnight or in oven at 80°C for 1 hour. Salt must be dry to prevent melting on pretzel.
  • Sift to break up clumps. Store airtight.

Step 3: Mix and Knead Dough (Day 1)

  • In stand mixer bowl, combine lukewarm milk (not hot), yeast, and brown sugar. Wait 5 min for yeast to dissolve and start foaming. This ensures activation.
  • Add 200 g pumpkin purée, bread flour, salt, spices. Mix on low to hydrate flour, then medium speed 5 min to develop gluten.
  • Add soft butter in small pieces, mixing another 5 min until dough is smooth, elastic, barely tacky. Dough should clear sides of bowl. If sticky, add up to 30 g more flour.

Step 4: Bulk Ferment (Day 1)

  • Place dough in lightly oiled bowl. Cover and proof at room temp (20–22°C) 60 min, then refrigerate overnight (12–16 hours). This slow ferment develops flavor and allows dough to relax for shaping.

Step 5: Portion and Pre-shape (Day 2)

  • Remove dough from fridge. On floured surface, divide into 12 x 90 g pieces.
  • Pre-shape each into rough logs, cover with towel, rest 20 min. This initial shaping aligns gluten and makes rolling easier.

Step 6: Shape into Pretzels (Day 2)

  • Roll each log into a 55–60 cm rope. If dough resists, let rest another 5 min.
  • Shape classic pretzel: Form U, cross ends, twist once, fold down to base, press lightly to adhere. Transfer to parchment-lined tray. This shapes a tight, even crumb and ensures even cooking.
  • Refrigerate 30 min uncovered to dry surface. A dry skin is needed for the lye dip to achieve gloss.

Step 7: Prepare and Dip in Lye (Day 2)

  • Preheat oven to 230°C. Put on gloves and eye protection. In stainless or enamel pot, add 1200 ml cold water, sprinkle in 50 g lye (never add water to lye). Stir to dissolve.
  • Dip pretzels one at a time for 10–15 sec; flip with slotted spatula. Let drip briefly, then return to tray. Lye reacts with the surface, producing the signature crust and color.

Step 8: Bake (Day 2)

  • Sprinkle burgundy salt generously on wet pretzels. Bake immediately at 230°C for 12–14 min until deep mahogany-brown.
  • Cool 5 min on tray, then move to wire rack. The crust will set and harden as it cools.

Pro Tips

  • Roasting the pumpkin until caramelized prevents a gummy crumb by reducing water content.
  • The dough should be slightly tacky but not sticky; adjust flour/pumpkin as needed.
  • Lye is caustic. Use gloves, goggles, and avoid aluminum. Rinse tools immediately after use.

Troubleshooting
