Instructions

Step 2: Prepare Dough
Combine bread flour, salt, brown sugar, spices, and yeast in mixer bowl. Add mashed sweet potato, warm water, milk, and softened butter. Mix on low for 3 min, then medium for 8 min. Dough should be smooth, elastic, slightly tacky. Rest, covered, 30 minutes. This develops gluten for shape and chew.
Step 3: Bulk Fermentation and Chill
