What Makes This Special
A Battenberg cake uses a checkerboard assembly, but here, almond flour is roasted for deeper flavor, and seasonal spices (especially cinnamon) are added. The cake is built keto by replacing sugar and flour, and the marzipan uses erythritol and almond flour. Roasting the nuts and precise assembly make this time-intensive and technical.
Ingredients
This cake is assembled from two distinct sponges, both keto, colored and flavored separately, then cut and stacked for the checkerboard effect. Roasted almond flour provides depth. Marzipan is made sugar-free. Keto apricot jam acts as glue.
For the Roasted Cinnamon Sponge
- 80g whole almonds, roasted and ground
- 60g almond flour
- 10g coconut flour
- 45g powdered erythritol
- 4g baking powder
- 2g cinnamon
- 1g ginger
- 1g salt
- 3 large eggs
- 70g butter, softened
- 30ml almond milk
- 1 tsp vanilla extract
- Zest of ½ orange
For the Spiced (Rustic Red) Sponge
- 80g whole almonds, roasted and ground
- 60g almond flour
- 10g coconut flour
- 45g powdered erythritol
- 4g baking powder
- 2g cinnamon
- 2g nutmeg
- 1g salt
- ½ tsp beetroot powder (optional, for color)
- 3 large eggs
- 70g butter, softened
- 30ml almond milk
- 1 tsp almond extract
- Zest of ½ orange
For the Sugar-Free Marzipan
- 120g almond flour
- 20g powdered erythritol
- 1 tsp xanthan gum
- 1-2 tbsp water (as needed)
- ½ tsp almond extract
Keto Apricot Jam (if not purchased)
- 2 tbsp dried apricots (unsweetened, chopped, soaked in hot water, then pureed with erythritol and water, or use unsweetened fiber jam)
Instructions
Step 1: Roast the Almonds
Preheat oven to 160°C (fan). Spread 160g whole almonds on a tray and roast for 15–18 minutes until deep golden, shaking halfway. Cool completely. Roasting drives off moisture and intensifies flavor.
Step 2: Grind the Almonds
Once cool, grind the almonds in a food processor until fine but not oily (pulse in short bursts). Divide into two 80g portions for each sponge. Over-processing will release oil and make the sponge dense.
Step 3: Prepare Sponge Batters
Prepare two bowls. In each, combine dry ingredients: ground roasted almonds (80g), almond flour (60g), coconut flour (10g), erythritol (45g), baking powder (4g), cinnamon, spices, salt. In another bowl, beat softened butter, eggs, almond milk, extract(s), and orange zest until creamy and light (3–4 min). Fold in dry ingredients with a spatula. Mix each flavor separately.
Step 4: Bake the Sponges
Line a 20cm square tin with parchment. Use a divider made from foil or folded parchment to split the tin in half. Pour one batter into each side, smoothing tops. Bake at 170°C (fan) for 22–25 minutes, until set, golden, and springy. Cool 10 min in tin, then lift out to racks.
Step 5: Trim and Assemble Checkerboard
Once completely cool, trim edges with a sharp knife to form two even rectangles per flavor (approx. 20cm x 4.5cm x 4cm each). You need four strips in total. Arrange two flavors in a checkerboard, brushing each join with a little warmed keto apricot jam (make by simmering keto-dried apricots with water and erythritol, then pureeing and cooling).
Step 6: Prepare Keto Marzipan
Combine almond flour (120g), powdered erythritol (20g), xanthan gum, and almond extract. Add 1 tbsp water and knead. Add more water, a few drops at a time, until a pliable paste forms. Wrap in plastic and chill 30 min. Xanthan gum binds marzipan in place of sugar.
Step 7: Cover the Cake
Roll marzipan between two sheets of parchment into a 20cm x 25cm rectangle, 3-4mm thick. Lift off top paper. Brush outside of cake with more keto jam, then place at one end of marzipan. Using parchment to help, roll marzipan around cake, pressing to seal and trimming seam. Turn seam-side down. Square off ends with sharp knife.
Step 8: Rest and Serve
Chill assembled cake at least 2 hours for structure. Slice with a hot, dry knife for clean edges.
Pro Tips
- Roasting nuts dries them, so always cool before grinding to prevent oil release.
- Dividers keep batters distinct; if they leak, your checkerboard will blur.
- Working with keto marzipan is more fragile than sugar-based; chill before rolling and work fast to avoid cracking.
Troubleshooting
Cake too crumbly? Too much coconut flour or overbaked. Reduce coconut flour by 2g or bake 2 minutes less.
Marzipan cracks? Not enough water or over-chilled. Knead in drops of water and reroll.
Variations
- Add ground cardamom or clove to deepen spice profile.
- Use pecans or hazelnuts instead of almonds for the roasted nut base.
- Omit beetroot powder for a more uniform color, or use turmeric for a yellow checker.
Storage
Store, wrapped tightly, in the fridge for up to 5 days. Bring to room temperature before slicing. Keto marzipan dries out if left uncovered.
