Ingredients
The dough uses coconut oil for lamination without dairy. Chickpea flour adds nutty aroma and a more tender crumb. For the Coconut Oil Pastry
- 250g plain flour: structure.
- 35g chickpea flour: colour and protein for a slightly more tender and aromatic crust.
- 5g fine sea salt: flavour and balance.
- 80g refined coconut oil (solid, not melted): fat for flakiness. Refined is neutral in flavour.
- 60g ice water (approximate): hydration. Adjust as needed for dough cohesiveness.
For the Roasted Sweet Potato & Onion Filling
- 600g sweet potato (peeled, cubed): bulk, sweetness, autumn colour.
- 20g coconut oil: roasting medium for browning and mild flavour.
- 1 large red onion (150g): savoury contrast.
- 10g fresh ginger (finely grated): sharpness and warmth.
- 2g fennel seeds, 2g cumin seeds: whole spices for aroma.
- 1g ground turmeric: earthiness and colour.
- 1g garam masala: complexity.
- 2g Kashmiri chili powder: mild heat, red colour.
- 20g coconut sugar: caramelisation and balance.
- 10g lemon juice: acidity.
- 2g fine sea salt.
For Assembly
- 100g pomegranate arils: tartness, crunch, colour.
- 25g chopped coriander: herbal element.
- Plant milk (30g): for brushing crust, browning.
- (Optional) 10g nigella seeds: additional aromatic crunch on crust.
Instructions
Step 1: Make Coconut Oil Pastry
Combine plain and chickpea flour with salt in a large bowl. Add solid coconut oil in small chunks. Using fingertips, rub oil into flour until the largest pieces are pea-sized. Do not overwork: the visible chunks of fat are required for flakiness. Add ice water gradually, tossing mixture with a fork until dough just comes together. If dough is dry, add water in 5g increments. Form dough into a flat disc, wrap, and chill for at least 45 minutes. Chilling solidifies coconut oil, making later lamination possible.
Step 2: Roast Sweet Potatoes and Onions
Heat oven to 210°C (fan 200°C). Toss sweet potato cubes with 15g coconut oil and 1g salt. Spread on lined tray. Roast 25 minutes, turning once, until browned at edges and soft inside. Meanwhile, heat 5g coconut oil in a small pan. Add fennel and cumin seeds. Cook 1 minute until aromatic. Add onions and ginger. Cook, stirring, until softened and golden (about 8 minutes). Add turmeric, garam masala, chili powder, and coconut sugar. Sauté 1 minute. Remove from heat. Tip roasted sweet potato into pan, add lemon juice, mix well, then cool completely. Cooling is necessary to prevent melting the coconut oil when filling the galette.
Step 3: Roll and Fill Galette
Remove dough from fridge. If too hard, let it rest at room temperature 5 minutes. On a lightly floured surface, roll into a 35cm rough circle, 3mm thick. Transfer to parchment-lined tray. Pile cooled filling in centre, leaving a 5-6cm border. Scatter pomegranate arils and coriander over filling, reserving 20g arils for later. Fold border up and over filling, pleating as necessary. The folds should overlap but not cover the centre. Chill assembled galette 15 minutes to set coconut oil.
Step 4: Bake
Brush crust with plant milk. Sprinkle with nigella seeds (optional). Bake at 210°C (fan 200°C) for 35-40 minutes, until crust is golden and crisp. Rotate tray halfway for even colour. Remove, cool 20 minutes on tray. Scatter reserved pomegranate arils over centre before serving. Serve warm or at room temperature.
Pro Tips
- Keep coconut oil solid at every stage for a layered, flaky pastry. Warm oil blends instead of laminating.
- Roast sweet potatoes until edges caramelise; under-roasting will give a watery, bland filling.
- Cool filling before assembly or the pastry will become greasy and collapse.
Troubleshooting
Pastry cracks when rolling? Dough is too cold. Let rest 5-10 minutes before attempting again.
Crust is tough? Overworked dough or melted coconut oil. Work quickly and chill as needed between steps.
