What Makes This Special

Ingredients

For the Laminated Dough

  • 300g plain flour: Provides structure. Divide 200g + 100g for plain/pumpkin layers.
  • 180g unsalted butter: Cold, cut into cubes. Butter is the source of steam and crispness.
  • 80g icing sugar: For fine crumb, dissolves easily.
  • ½ tsp fine salt: Balances sweetness.
  • 1 large egg yolk: Adds structure and color.
  • 60ml maple syrup: Replaces some sugar and liquid; autumnal and viscous.
  • 50g pumpkin puree: Extra moisture and color. Must be strained to prevent soggy dough.
  • 20ml cold water: Adjusts dough consistency.
  • ½ tsp cinnamon, ¼ tsp ginger: Subtle spicing.
  • Orange gel color: For visual layering, optional.
  • 1 egg white, 15g granulated sugar: For egg wash and sprinkle.
  • 30 dark chocolate chips: For Halloween ‘cat eye’ effect.

Instructions

Step 1: Prepare Pumpkin Layer

  • Combine 100g flour, 25g icing sugar, ¼ tsp salt, ¼ tsp cinnamon, ¼ tsp ginger in a bowl.
  • Add 50g pumpkin puree (well strained), 10ml maple syrup, 30g cold butter cubes.
  • If desired, add a small amount of orange gel coloring.
  • Rub together until fine crumbs form, then mix in half the egg yolk (about 9g).
  • Add a teaspoon of cold water if dry. Forms a soft but workable dough.
  • Press into a rectangle, wrap in cling film, chill 45 minutes.

Why: Layer separation requires low hydration and even butter distribution. Pumpkin brings moisture; straining is essential.

Step 2: Prepare Plain Layer

  • In stand mixer bowl, blend 200g flour, 55g icing sugar, ¼ tsp salt, ¼ tsp cinnamon.
  • Add 150g cold butter cubes. Mix on low until pea-sized crumbs.
  • Add remaining egg yolk, 50ml maple syrup. Pulse until just combined.
  • Add 1-2 teaspoons cold water only if the dough will not hold when pressed.
  • Form into rectangle, wrap, chill 45 minutes.

Why: Keeping butter cold and in shards controls lamination quality.

Step 3: Roll Out Layers

  • On floured parchment, roll each dough to a 15x25cm rectangle, 5mm thick.
  • Chill again 30 min to firm up.

Why: Cold dough prevents merging; layers remain distinct during lamination.

Step 4: Laminate

  • Lay pumpkin layer on top of plain layer, trim edges to match.
  • Roll tightly from the short end, forming a 25cm log. Wrap in cling film, freeze 30 min.
  • Unwrap. With a rolling pin, gently flatten the log into a 10x30cm rectangle (lamination step 1).
  • Fold into thirds (like a letter), turn 90°, roll out again to 10x30cm. Repeat fold (lamination step 2).
  • Wrap and chill 1 hour.

Why: Each fold/trifold creates multiple layers, trapping air and butter. Flattening and folding builds the flaked structure.

Step 5: Shape Biscuits

  • Slice dough crosswise into 30 even pieces (about 1cm thick).
  • Use your hands to gently shape each into an oval, resembling a cat’s eye.
  • Press a chocolate chip into the center for the pupil. Place 2cm apart on lined baking sheets.
  • Chill shaped biscuits 30 minutes to set shape and prevent spread.

Why: Chilling at every stage prevents butter melt and preserves layering.

Step 6: Slow Bake

  • Preheat oven to 150°C (fan off, conventional only).
  • Brush biscuits lightly with egg white. Sprinkle with granulated sugar for crunch.
  • Bake in center of oven for 45-50 minutes, rotating trays after 25 minutes.
  • Biscuits should be dry and crisp, with distinct laminated bands visible.
  • Cool fully on trays before moving.

Why: Slow baking at low temperature evaporates water without melting butter, maximizing lamination and color contrast.

Pro Tips

  • Keep all ingredients and equipment cold at every stage; heat ruins lamination.
  • Do not overwork the dough after butter is added. Overmixing destroys layers.
  • Use a long, even rolling pin and rotate dough as you roll for even pressure.

Troubleshooting

Biscuits spread or lose shape? Dough was not chilled enough before slicing and baking. Chill between every step.

Layers not visible after baking? Butter too soft, or dough was overmixed. Ensure visible butter shards before rolling and keep dough cold.

Variations

  • Substitute sweet potato puree for pumpkin for a milder orange layer.
  • Add ground black sesame to the pumpkin dough for a speckled effect.
  • Fill the center with candied ginger instead of chocolate chips for a savory note.

Storage

Store in airtight container at room temperature up to 5 days. For best texture, eat within 3 days. Freeze unbaked, shaped biscuits for up to 2 months and bake from frozen, adding 5 minutes to bake time.
