Instructions

Step 1: Prepare and Temper Sweet Potato

Cook sweet potato until completely soft. Mash to a smooth puree. Cool to room temperature (about 21–23°C). Do not skip cooling—hot puree will “cook” the flours and eggs prematurely, resulting in a dense dough.

Step 2: Combine Dry Ingredients

In a large bowl, whisk almond flour, tapioca starch, coconut flour, salt, and (if using) baking soda and yeast. This disperses leavening and prevents clumps.

Step 3: Add Wet Ingredients and Temper

Add cooled sweet potato, eggs, olive oil, vinegar, honey (if using), and warm water. Mix with spatula. The dough will be sticky but cohesive. Tempering: Let the dough rest uncovered for 10 minutes. This rest hydrates starches and lets coconut flour absorb moisture. It is essential for shaping and finished texture.

Step 4: Shape Pretzels

Lightly oil hands. Divide dough into 8 pieces. Roll each into a rope (about 35 cm). Form traditional pretzel shapes: make a U, cross the ends, twist, and press onto the bottom. Place onto parchment-lined tray. If dough cracks, knead once or twice to rehydrate surface, then shape again.

Step 9: Cool

Let pretzels cool on tray 10 minutes, then transfer to a rack. Serve warm or at room temperature.
