What Makes This Special
This cake uses roasted spiced walnuts for layered texture, olive oil for moisture, orange for aroma, and a honey-orange syrup for a sticky, golden finish. The roasting step deepens the walnut flavor and prevents sogginess. The syrup adds moisture and shine, and the cake balances Mediterranean sweet and savory elements.
Ingredients
Each ingredient is chosen for a functional role. Olive oil keeps the crumb moist and carries the orange aroma. Roasted walnuts supply crunch and contrast. Citrus juice reacts with leaveners. Honey syrup locks in moisture and color.
For the Spiced Roasted Walnuts
- 180 g walnuts (raw, shelled)
- 25 g honey
- 1 tsp ground cinnamon
- 1/4 tsp ground clove
- 1/2 tsp salt
For the Cake
- 250 g plain flour
- 2 tsp baking powder
- 3/4 tsp bicarbonate of soda
- 1/2 tsp fine salt
- 3 large eggs (150 g total, room temperature)
- 180 g caster sugar
- 140 ml extra-virgin olive oil
- 120 ml milk (whole, room temperature)
- 80 ml orange juice (fresh, strained)
- 1 tbsp orange zest (about 1 large orange)
- 1 tsp vanilla extract
- 80 g Greek yoghurt
- Reserved spiced roasted walnuts
For the Honey-Orange Syrup
- 120 ml honey
- 60 ml water
- 1 tbsp orange blossom water (optional)
Instructions
Step 1: Roast and Spice the Walnuts
Preheat oven to 170°C. Line a baking tray with parchment. In a bowl, toss walnuts with 25 g honey, cinnamon, clove, and salt. Spread in a single layer. Roast for 12-15 minutes, stirring halfway. The honey will caramelize and the nuts will darken. Remove and let cool. Chop roughly. This step develops flavor and makes the walnuts resistant to sogginess in the batter.
Step 2: Prepare the Cake Pan
Grease a 20 cm round tin and line the base with parchment. This prevents sticking and ensures the cake releases cleanly.
Step 3: Combine Dry Ingredients
In a bowl, whisk together flour, baking powder, bicarbonate of soda, and salt. Mixing these first distributes the leaveners evenly, preventing uneven rise.
Step 4: Aerate the Eggs and Sugar
In a stand mixer with whisk attachment, beat eggs and caster sugar on medium-high for 3-4 minutes until pale and thick. This incorporates air, which helps with cake rise and crumb.
Step 5: Emulsify Wet Ingredients
Slowly drizzle in olive oil while mixing on low. Once combined, mix in milk, orange juice, orange zest, vanilla, and Greek yoghurt. Scrape bowl as needed. The order prevents curdling and maintains a stable emulsion.
Step 6: Fold in Dry Ingredients
Add dry ingredients in two additions. Fold gently with a spatula to avoid deflating the batter. Mix until just combined. This keeps the crumb tender.
Step 7: Add Roasted Walnuts
Reserve a handful for topping. Fold the rest into the batter. This distributes flavor and prevents them sinking to the bottom.
Step 8: Bake
Pour batter into prepared tin. Scatter reserved walnuts on top. Bake at 170°C for 45-55 minutes. The cake is done when a skewer inserted into the center comes out clean, or with a few moist crumbs. Do not overbake or the cake will dry out.
Step 9: Prepare the Syrup
While the cake bakes, combine honey and water in a small saucepan. Bring to a simmer, stir until fully combined, and remove from heat. Stir in orange blossom water if using. This step prevents honey crystallization and ensures even absorption.
Step 10: Syrup and Cool
When cake is done, let it cool in the tin for 10 minutes. Pierce the top all over with a skewer. Pour the warm syrup slowly over the cake, letting it soak in. Cool fully in the tin on a rack. This hydrates the crumb and gives shine.
Pro Tips
- Use room temperature eggs and dairy for a stable emulsion that won’t split.
- Don’t skip walnut roasting; raw walnuts will taste bland and can turn soggy.
- Pour syrup gradually to avoid flooding the cake and splitting the crumb.
Troubleshooting
Cake stuck in tin? Use parchment and grease. Run a knife round the edge before unmolding.
Walnuts sink to bottom? Chop them not too fine and fold in just before baking, after the dry ingredients.
Syrup won’t absorb? Pierce deeper and pour syrup slowly while cake is still warm.
Variations
- Replace orange juice and zest with lemon for a sharper aroma.
- Add 40 g chopped dried figs with the walnuts for extra texture.
- Use pistachios instead of walnuts, but roast as in method.
Storage
Store airtight at room temperature for up to 3 days. Refrigerate if keeping longer; cake will firm up but flavor persists. Freeze slices wrapped tightly for up to 2 months.
