Instructions

Step 1: Brown the Butter and Infuse Spices

Melt 180 g butter in a medium saucepan over medium heat. Stir continuously as solids sink and brown, producing a nutty aroma. Immediately add black tea leaves and all chai spices (cinnamon, ginger, cardamom, cloves, black pepper, nutmeg). Remove from heat and let steep for 5 minutes. Strain butter through a fine mesh strainer into a bowl; discard solids. Chill until solid but pliable (about 45 minutes in the fridge). This step builds flavor and structure; don’t rush cooling.

Step 2: Prepare and Roast Beets

Preheat oven to 200°C. Peel and slice beets into 0.5 cm rounds. Toss with 5 g oil and roast on parchment for 25–30 min until tender. Cool completely. Beets provide burgundy color and structure. Roasting removes excess moisture.

Step 3: Make Chai-Spiced Dough

In a large bowl, mix flour, sugar, salt. Cut in chilled chai brown butter with a bench scraper until largest pieces are pea-sized. Step 4: Caramelize Apples

Step 5: Roll and Assemble Galette

Step 6: Bake

Preheat oven to 200°C. Whisk egg and milk. Brush dough border with egg wash. Sprinkle demerara sugar over crust and apples. Bake on middle rack 35–40 min until crust is deep golden and filling bubbles. Cool on sheet 15 min. Flaky salt can be added after baking for contrast.
