Ingredients

  • 100 g unsalted butter, cold

For the Roasted Cranberry Compote

  • 200 g cranberries
  • 70 g light brown sugar
  • 1 orange, zested and juiced

For the Golden Pastry Cream

  • 250 ml whole milk
  • 50 g caster sugar
  • 3 large egg yolks
  • 20 g cornflour
  • 30 g unsalted butter
  • 1/4 tsp ground turmeric (optional, for color)

For Finishing

  • Vegetarian egg wash: 1 tbsp milk + 1 tbsp maple syrup
  • Icing sugar (optional)

Instructions

Step 1: Make and Chill the Dough

Mix flour, sugar, salt, and yeast in a bowl (yeast and salt on opposite sides). Add milk, egg, vanilla, and softened butter. Knead until smooth and elastic (10 min by hand; 6 min stand mixer). The dough should be soft but not sticky. Flatten into a 2-cm thick rectangle, wrap, and refrigerate 1 hour. Chilling slows yeast activity, allowing gluten to relax for easier lamination.

Step 2: Prepare Lamination Butter

Pound cold butter between sheets of baking paper into a 12 x 15 cm rectangle. Butter must be cold but pliable, matching dough consistency. Chill until needed.

Step 3: Laminate the Dough

Roll dough to approx. 20 x 30 cm. Place butter slab on one half and fold over. Seal edges. Roll to 18 x 40 cm. Fold into thirds (letter fold). Wrap and chill 30 minutes. Repeat rolling and folding twice more, chilling 30 min between each. Lamination builds layers by encasing cold butter; chilling prevents butter melt and layer collapse.

Step 4: Roast Cranberries

Preheat oven to 200°C. Toss cranberries with sugar, orange zest, and juice. Spread on tray. Roast 15–18 minutes until cranberries burst and juices thicken. Cool. Roasting concentrates sugars and breaks down pectin, making a spreadable compote.

Step 5: Temper and Cook Pastry Cream

In a bowl, whisk yolks, sugar, and cornflour until pale. In a saucepan, heat milk (and turmeric if using) to steaming but not boiling. Slowly whisk 1/3 hot milk into yolk mixture to raise temperature without coagulating proteins (tempering). Return mixture to pan. Cook over medium, whisking constantly, until thick bubbles form (2–3 min). Remove from heat, whisk in butter. Sieve to remove lumps. Cover surface with plastic wrap. Cool completely. Tempering prevents curdling by gradually increasing the egg temperature and minimizing protein shock.

Step 6: Shape and Fill Buns

Roll chilled dough to 30 x 40 cm. Spread a thin layer of pastry cream over surface, then scatter roasted cranberries on top. Roll up from long edge. Slice into 10 equal buns. Arrange on lined tray, spacing 4 cm apart. Cover and proof 60–90 min until doubled. Proofing allows yeast to generate gas, creating volume in final pastry.

Step 7: Bake

Preheat oven to 190°C. Brush buns with vegetarian egg wash. Bake 20–24 minutes until deep golden and pastry is set. Cool on wire rack. Baking sets the laminated layers and ensures even color.

Step 8: Finish

Dust with icing sugar when cool, if desired.
