Instructions

Step 1: Make the Semolina Pastry

Combine flour, semolina, sugar, and salt in a large bowl. Add cold butter. Rub in with fingertips or cut in with a pastry blender until mixture resembles coarse breadcrumbs. This distributes fat in the flour, forming small pockets for flakiness. Add the beaten egg and mix. Add cold water, a tablespoon at a time, until dough just comes together. Do not overwork. Semolina dough is more crumbly than classic shortcrust. Form into a disc, wrap, and chill for 30 minutes. Chilling relaxes gluten and allows hydration.

Step 2: Prepare the Pears

Peel, core, and slice pears into 0.5 cm slices. Toss with lemon juice, brown sugar, cinnamon, ginger, and 25 g semolina in a bowl. Semolina will absorb juices as pears macerate, preventing a wet filling.

Step 3: Line the Pie Tin

Step 4: Assemble

Step 5: Slow Bake
