What Makes This Special
This is a Lebanese sfeeha adapted for autumn with roasted pumpkin and a pronounced cinnamon note. The filling is savory; cinnamon amplifies warmth and reinforces the seasonal theme without introducing noticeable sweetness. Pleated dough forms a pie that bakes golden and holds a spiced, orange-hued center.
Ingredients
The dough is a simple yeasted bread dough designed for both softness and structure, to hold the wet filling without bursting. The filling blends minced beef, roasted pumpkin, and a calculated spice mix, including cinnamon for warmth. Pomegranate molasses ensures sharpness and depth.
For the Dough
- 400 g strong white bread flour: Develops gluten for elasticity and structure.
- 8 g fine sea salt: Controls yeast and flavors the dough.
- 7 g instant yeast: Leavens the dough.
- 15 g granulated sugar: Feeds yeast, aids browning.
- 45 ml olive oil: Tenderizes and flavors.
- 220 ml lukewarm water: Hydrates dough and activates yeast.
For the Filling
- 300 g beef mince (15% fat): Savory base, fat adds juiciness.
- 200 g peeled pumpkin: Roasted for autumn color and subtle texture.
- 1 medium onion (120 g): Sweetness and aroma.
- 2 cloves garlic (8 g): Aromatic undertone.
- 1.5 tsp ground cinnamon (4 g): Warmth that marks autumn.
- 1 tsp ground allspice (2 g): Classic Lebanese spice.
- 1/2 tsp black pepper (1 g): Heat.
- 1/2 tsp sumac (1 g): Tart contrast.
- 1.5 tsp salt (6 g): Balances profile.
- 20 g pine nuts: Texture, slight butteriness.
- 10 g fresh parsley: Freshness to finish.
- 25 ml pomegranate molasses: Acid, depth.
- 20 ml neutral oil: Roasting pumpkin.
For Assembly
- 1 egg yolk + 15 ml milk: Egg wash for color.
Instructions
Step 1: Make the Dough
Combine flour, salt, yeast, and sugar in a mixing bowl. Add olive oil and lukewarm water. Mix until a rough dough forms. Knead by hand (10 minutes) or stand mixer (6 minutes) until smooth and elastic. Cover and let rise at warm room temperature until doubled (about 1 hour).
Why? Proper gluten development is essential. Undermixed dough will tear during shaping and lose filling. Rising allows yeast to produce CO₂, making the dough extensible and easier to shape.
Step 2: Roast the Pumpkin
Toss diced pumpkin with 20 ml neutral oil and 1/4 tsp salt. Spread on parchment-lined tray and roast at 200°C (fan 180°C) for 18-22 minutes, until just tender and lightly colored. Cool fully.
Why? Roasting removes water and intensifies flavor. Wet pumpkin leads to soggy pies; cool pumpkin won’t kill yeast in dough.
Step 3: Prepare the Filling
Toast pine nuts in a dry pan over medium heat until golden (about 3-4 minutes). Remove. In same pan, sauté onion in 10 ml oil until translucent (5-6 minutes). Add garlic, cook 1 minute. Add beef mince, cook until browned, breaking up clumps (8 minutes). Add spices (cinnamon, allspice, pepper, sumac), salt, and stir 2 minutes. Fold in roasted pumpkin, toasted pine nuts, parsley, and pomegranate molasses. Cook until most moisture is gone (3-5 minutes). Cool fully.
Why? Spices must bloom in oil for maximum aroma. Cooking down the mixture prevents soggy pies and ensures even distribution.
Step 4: Divide and Shape the Dough
Punch down risen dough. Divide into 16 equal pieces (~36 g each). Roll each piece into a ball, cover, rest 10 minutes (prevents tearing). Flatten each ball to a 10 cm round using a rolling pin. Keep unused rounds covered.
Why? Resting relaxed gluten, making dough easier to stretch thin without snapping back. Even rounds lead to even pies.
Step 5: Fill and Pleat
Place 1.5 tbsp (35-40 g) cooled filling in the center of each round. Gather edges and pinch at five points to form a pentagonal star, leaving a small opening in the center. Pinch seams tightly to avoid leaks.
Why? Traditional sfeeha shape exposes some filling, ensuring crust bakes fully and filling steams but doesn’t burst out. Tight seals matter: failed seams mean lost juices and shape collapse.
Step 6: Proof and Finish
Arrange pies on parchment-lined tray, spaced apart. Cover loosely with plastic. Proof 20 minutes at room temperature. Preheat oven to 220°C (fan 200°C).
Why? Final proof gives dough a last rise, making pies lighter and less dense.
Step 7: Egg Wash and Bake
Mix egg yolk and milk. Brush onto exposed dough. Bake at 220°C (fan 200°C) for 15–18 minutes, until deep golden brown.
Why? Egg wash produces color and slight sheen. High heat sets crust before filling can leak.
Step 8: Cool and Serve
Cool on tray 5 minutes, then move to wire rack. Eat warm or at room temperature.
Why? Cooling firms up structure. Eating too hot risks burns and collapsed pies.
Pro Tips
- Use strong flour. Weak flour leads to tears and collapsed pies.
- Filling must be cool and dry. Hot or wet filling destroys dough structure.
- Pinch seams firmly until dough sticks together; dry fingers help.
Troubleshooting
Filling leaks out during baking? Seams were not pinched tightly or dough was rolled too thin; next time, seal more firmly and ensure even thickness.
Dough is tough? Over-kneading or insufficient first rise. Check kneading time and allow full doubling before shaping.
Pies brown unevenly? Oven temperature not accurate or tray not centered; use an oven thermometer and rotate tray halfway.
Variations
- Use lamb mince instead of beef for a more traditional flavor.
- Replace pumpkin with roasted butternut squash or carrot for a different color and texture.
- Add 50 g crumbled feta to the filling for tang and added creaminess.
Storage
Store cooled pies in an airtight container at room temperature for up to 2 days or refrigerate for up to 4 days. Reheat in a 180°C oven for 10 minutes for best texture.
