- 1/2 tsp ground cardamom: identifies the filling, do not omit.
- 30 ml sunflower oil: dairy-free richness.
- 1/2 tsp fine salt: balances sweetness, defines flavor.
Instructions
Step 1: Prepare and Reduce Aquafaba
Simmer aquafaba in a small saucepan over medium-low heat until reduced to 90 g (from 110 g). Cool completely. This step concentrates proteins, making a stable meringue.
Step 2: Sift Almond and Icing Sugar with Cardamom
Sift almond flour, icing sugar, and 2 g ground cardamom into a large bowl. Sifting ensures a smooth shell and even distribution of cardamom. Discard large almond pieces.
Step 3: Make Italian Meringue (Aquafaba)
Place 45 g cooled aquafaba and cream of tartar into stand mixer. Begin whisking on medium speed. Simultaneously, boil caster sugar (150 g) and water (37 g) in saucepan to 118°C. Pour syrup in a thin stream into aquafaba while whisking on high. Continue whisking until stiff peaks form (8-10 min). Meringue should be glossy and hold a peak when the whisk is lifted.
Step 4: Macaronage (Mixing Batter)
Mix remaining 45 g aquafaba into sifted dry mixture to form a thick paste (mass). Fold in gel coloring at this stage for even color. Fold one-third of meringue into almond paste to loosen. Add the rest and fold with a spatula, scraping around the bowl and cutting through the center, until batter flows in thick ribbons and a figure-8 can be drawn without breaking. Under-mixing leads to lumpy, cracked shells; over-mixing means flat, spread shells.
Step 5: Pipe and Rest the Shells
Transfer batter to a piping bag fitted with a 10 mm round tip. Pipe 3.5 cm rounds onto baking trays lined with parchment or silicone mats, spacing 3 cm apart. Tap trays firmly to release air bubbles. Pop visible bubbles with a toothpick. Rest trays at room temperature (18-22°C) for 45-90 minutes until a matte skin forms and batter does not stick to your finger. This step is critical for the signature feet.
Step 6: Bake the Macarons
Bake, one tray at a time, at 125°C (fan off) for 18-22 minutes. Rotate tray halfway. Shells are done when they lift cleanly from the parchment and have solidified feet. Cool shells completely on the tray, then transfer to a wire rack.
Step 7: Caramelize Chestnuts
Pulse chestnuts in a food processor to a coarse crumb. In a heavy pan, melt 80 g caster sugar over medium heat until amber. Quickly add chestnuts and salt; stir continuously for 2 minutes. The sugar will seize, then melt again as you stir. Add maple syrup and sunflower oil, continue stirring over low heat until mixture thickens and all sugar is dissolved, 3-5 minutes. Blend to a smooth, thick paste in food processor. Cool completely.
Step 8: Fill and Age
Pair shells by size. Pipe or spoon chestnut-cardamom paste onto half the shells, then sandwich. Rest assembled macarons in a sealed container for at least 24 hours at 4°C. This allows moisture transfer, softening the interior for correct texture.
Pro Tips
- Sift almond flour and icing sugar thoroughly for a smooth finish; grainy flour will cause lumpy shells.
- Ensure aquafaba is fully reduced and chilled before whipping. Warm or watery aquafaba will collapse.
- Use a sugar thermometer. Undercooked syrup = weak meringue; overcooked syrup = dry shells.
Troubleshooting
Cracked shells? Batter was under-mixed, or skin was not fully set before baking. Rest longer and tap out air.
No feet? Over-mixed batter, or oven too cool. Watch the macaronage and calibrate your oven.
Hollow shells? Over-whipped meringue or baked too hot. Whip meringue only to stiff peaks, not dry.
Variations

Storage
