Instructions

Step 1: Roast the Persimmons

Heat oven to 200°C. Slice persimmons in half, remove seeds. Place cut side up in a roasting dish, drizzle with oil, and sprinkle with all spices. Roast 25–30 minutes until soft and golden at the edges. This concentrates sugars and caramelizes the fruit surface.

Scoop flesh into a blender and blend until smooth. Set aside to cool.

Step 2: Prepare the Dough

In a large bowl, combine rye flour, bread flour, yeast, brown sugar, and salt. Add warm water and melted butter. Mix until a shaggy dough forms. Knead by hand or with a dough hook for 5–7 minutes. The dough will be tacky but should come together as a ball. Kneading develops what gluten there is in rye and bread flour, allowing shaping.

Rest dough, covered, for 30 minutes. This relaxes the mix and allows partial fermentation, which improves flavor and structure.

Step 3: Shape the Pretzels

Step 4: Poach the Pretzels

Bring 800 ml water to a simmer in a wide saucepan. Add baking soda (it will fizz). Poach pretzels one or two at a time: lower into water, poach 25 seconds, flip and poach 10 seconds more. Remove with slotted spoon. This step gelatinizes the dough surface, setting it up for the classic chewy crust.

Return poached pretzels to the tray.

Step 5: Glaze and Bake

Brush each pretzel with egg wash. Use a spoon or brush to add a generous layer of spiced persimmon puree to the top loop and arms. The puree should be thick but spreadable. The egg wash helps the puree adhere and gives shine.

Bake at 200°C for 14–16 minutes, until deeply golden. The rye base will darken more than a wheat dough.

Cool on a wire rack. Serve warm or at room temperature.
