Instructions

Step 1: Make Quick Puff Pastry (Rough-Puff)

  1. Tip flour and salt into a large bowl. Add cold, diced butter. Using fingertips, toss until butter is coated in flour but still in large pieces (around pea size). Do not overwork; visible butter chunks create layers.
  2. Add most of the cold water, mix just until dough holds together. Press to form a rough rectangle. Wrap and chill 20 minutes to relax gluten.

Step 2: Laminate the Dough

  1. On a floured surface, roll dough into a 30x15 cm rectangle. Fold top third down, then bottom third up (letter fold). Turn 90 degrees. Chill 15 min.
  2. Repeat rolling and folding process 2 more times, chilling 10 min between each. This creates steam pockets for lift and layering. The lamination is the mechanism that differentiates this from a standard shortcrust.

Step 3: Make Almond Meringue Layer

  1. Sift ground almonds and icing sugar together. Set aside.

Step 7: Make Roasted Cinnamon Cream

  1. Beat mascarpone until smooth. Add roasted cinnamon sugar and beetroot puree. Mix until fully combined. Color should be burgundy. Chill 10 min.

Step 8: Assemble and Cut

  1. Slice baked macaron slab in half crosswise to make two rectangles. Spread chilled cinnamon cream over one half. Sandwich with other half, meringue side up. Chill 30 min to set. Cut into 18 bars for serving. Each piece shows distinct layers and color.

  • Keep butter and water very cold in pastry; warm butter won’t form layers.
