Ingredients
We blend traditional choux pastry with a Japanese twist: a yogurt-based filling, a grilled melon accent, and a sugar-free approach. Greek yogurt forms the creamy heart, while grilled cantaloupe brings a caramelized, seasonal fruitiness. Erythritol or allulose replaces sugar for a guilt-free treat. Spirulina yields the turquoise hue for a stunning finish.
For the Choux Pastry (Éclair Shells)
- 70g unsalted butter
- 100ml water
- 50ml milk
- 1g salt
- 70g all-purpose flour
- 2 large eggs (about 110g)
For the Yogurt Pastry Cream
- 200g Greek yogurt (unsweetened)
- 100g erythritol or allulose
- 150ml heavy cream (unsweetened)
- 10g cornstarch
- 2 tsp lime juice
For the Grilled Cantaloupe
- 200g cantaloupe, sliced
- 1 tbsp olive oil
For the Turquoise Yogurt Glaze
- 2 tbsp Greek yogurt
- 2 tbsp erythritol
- 30ml water
- 1/4 tsp spirulina powder (optional, for color)
- Pinch of salt

Instructions
Step 1: Make the Choux Pastry (Éclair Shells)
- Preheat oven to 180°C (fan 160°C). Line a baking tray with parchment paper.
- In a medium saucepan, combine butter, water, milk, and salt. Bring to a boil over medium heat, stirring until butter melts.
- Remove from heat, add flour all at once, and stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides.
- Return to low heat; cook, stirring constantly, for 1-2 minutes to dry out the dough slightly (this ensures a crisp shell).
- Transfer to a bowl. Let cool for 5 minutes.
- Add eggs, one at a time, beating well after each addition. Dough should be glossy and fall slowly from a spoon.
- Transfer to a piping bag fitted with a 1.5cm round tip. Pipe 10cm long lines onto the tray, spacing well apart.
- Bake for 25–30 minutes until puffed and golden. Turn off oven, leave door slightly ajar, and let éclairs dry for 10 minutes. Cool on wire rack.
Step 2: Grill the Cantaloupe
- Heat a grill pan (or grill) over medium-high. Brush cantaloupe slices lightly with olive oil.
- Grill for 2–3 minutes per side until charred marks appear and the aroma intensifies.
- Let cool, then cut into small cubes (about 0.5cm). Set aside.
Step 3: Prepare the Yogurt Pastry Cream (Tempering Technique)
- In a bowl, whisk cornstarch, erythritol, and a splash of the heavy cream to make a smooth slurry.
- In a small saucepan, heat the rest of the cream gently until just steaming—do not boil.
- Tempering: Slowly pour half of the warm cream into the cornstarch-erythritol slurry, whisking constantly to prevent lumps. This gradually raises the temperature of the mix, preventing the starch from clumping.
- Return the tempered mixture to the saucepan with the remaining cream. Cook over medium-low heat, whisking constantly, until thickened (about 2–4 minutes).
- Remove from heat. Stir in the yogurt and lime juice. Chill until thick and cool (about 30 minutes).
Step 4: Make the Turquoise Yogurt Glaze
- In a small saucepan, combine water and erythritol. Heat gently until dissolved.
- Remove from heat. Stir in yogurt, spirulina (if using), and a pinch of salt until smooth and turquoise-hued. Cool to room temperature.
Step 5: Assemble the Éclairs
- Using a serrated knife, gently split each éclair shell in half lengthwise.
- Spoon or pipe a generous layer of yogurt pastry cream into the bottom half of each shell.
- Scatter grilled cantaloupe cubes evenly over the cream.
- Replace the top half of each éclair.
- Drizzle or spread the turquoise glaze over the tops. Garnish with mint leaves if desired.
