Instructions
Step 1: Roast the Pears
Preheat oven to 200°C (conventional). Toss diced pear with oil and spread on a lined baking tray. Roast for 18–22 minutes, stirring once, until golden and some edges caramelized. Pear must lose excess moisture—otherwise it will make the bread soggy. Cool completely.
Step 2: Cream Butter and Sugar
In a stand mixer fitted with the paddle, beat butter and sugar on medium speed for 3–5 minutes until very pale and fluffy. (Creaming incorporates air, which helps the bread rise and lightens the crumb.) Scrape down the bowl. Add orange zest and cinnamon; mix until distributed.
Step 3: Add Eggs Gradually
Beat eggs lightly, then add in 3 additions to the creamed mixture, mixing well on medium after each. This prevents curdling and ensures an even emulsion. If the mixture splits, add a tablespoon of flour and beat until it comes together.
Step 4: Mix in Milk
With mixer on low, add lukewarm milk in a slow stream. Mixture will look loose and may briefly separate—this is normal, and will come together with the dry ingredients.
Step 5: Add Dry Ingredients
In a separate bowl, mix flour, yeast, and salt. Add all at once to the wet mixture. Switch to the dough hook. Knead on low speed for 6–8 minutes, until smooth and elastic. (You can do this by hand: knead for 10–12 minutes.) Dough should be slightly tacky but clear the sides of the bowl.
Step 6: First Rise
Turn dough into a lightly greased bowl. Cover and proof at room temperature for 60–75 minutes, until doubled in size. Yeast produces CO₂, making the dough rise.
Step 7: Incorporate Roasted Pears
Pat dough out on a lightly floured surface into a rectangle (about 2cm thick). Scatter cooled roasted pears over, then fold the dough over itself repeatedly to evenly distribute. Be gentle—avoid mashing the fruit. Shape into a rough log.
Step 8: Second Rise
Place shaped log onto a parchment-lined baking tray. Cover loosely. Let rise for 35–45 minutes until puffed and almost doubled. Preheat oven to 180°C.
Step 9: Bake
Bake in center of the oven at 180°C for 28–32 minutes, until golden brown and the loaf sounds hollow when tapped. Internal temperature should reach 93°C.
Step 10: Glaze
While bread is hot, bring honey and water to a simmer in a small saucepan. Brush over the loaf for a shiny, sticky finish. Cool on a rack for at least 45 minutes before slicing.

- Use room temperature butter and eggs for best aeration during creaming.
- Fully cool the roasted pears before adding to the dough to avoid melting the butter structure.
- If the dough is too sticky, add up to 1 tbsp more flour; if too dry, add 1 tbsp more milk. Small adjustments only.
Troubleshooting
Bread is dense, not fluffy? Under-creaming or insufficient kneading. Cream until very light, and knead until smooth and springy; both create a soft crumb.
Fruit sunk to bottom? Pears too wet or dough not folded enough. Ensure pears are roasted dry and fully cooled; fold gently but thoroughly.
