Instructions

Step 1: Prepare the Biscuit Base & Knead

Crush the digestive biscuits into fine crumbs (use a food processor or a rolling pin in a zip-top bag). Pour in the melted butter. Here comes the technique-building step: Kneading the crust. Using clean hands, knead the butter and crumbs together for 2–3 minutes. This helps evenly coat every crumb and slightly aerates the mixture, giving the base a lighter, crunchier texture after chilling. Press the kneaded mixture firmly into the base of your 20cm springform tin, using the back of a spoon or an offset spatula for an even layer. Chill in the fridge for 30 minutes.

Step 3: Whip the Cream & Incorporate Rose Water

In a separate bowl, whip the cold double cream until it forms soft peaks. Stir the bloomed gelatin over a gently simmering water bath until melted and clear (do not overheat). Cool for 1 minute, then whisk into the cream cheese mixture along with the lemon juice and rose water. Gently fold in the whipped cream using a spatula, keeping the mixture light and airy.

Step 4: Assemble the Cheesecake Layer

Pour the rose water cheesecake mixture over the chilled base. Smooth the top with an offset spatula. Tap the tin gently to remove air bubbles. Refrigerate for at least 3 hours, or until just set but not firm to the touch.

Step 5: Prepare Coral Tomato Rose Jelly

Blanch the tomatoes in boiling water for 30 seconds, then plunge into ice water and peel. Chop finely and set over a sieve lined with cheesecloth. Press gently to collect 100ml clear juice. In a small saucepan, combine tomato juice, 60g sugar, 1 tbsp lemon juice, pinch of salt, and 5ml rose water. Warm gently until sugar dissolves (do not boil).

Bloom 4g gelatin in 30ml cold water for 5 minutes. Stir into the warm tomato mixture until completely dissolved. Let the jelly cool to room temperature.

Step 6: Pour and Set the Jelly Layer

Slowly pour the cooled coral tomato rose jelly over the set cheesecake layer. If the cheesecake is not fully set, the jelly may seep into it, so ensure it’s firm before pouring. Tilt the tin gently for an even layer. Refrigerate 90 minutes, or until the jelly is set and wobbly.
