What Makes This Special

The mascarpone is used twice: in the crust for tenderness, and whipped into a stabilized cream for the finish. The frangipane is built on pecans instead of almonds, with a custom spice blend that references Italian autumn baking and the American Thanksgiving palette. The crostata format is less formal than a pie but relies on advanced dough handling. The creaming method is used in both the frangipane and the mascarpone cream, demanding precision in fat and sugar emulsification.

Ingredients

Every ingredient is selected for function: flour for structure, butter and mascarpone for fat and moisture, eggs for binding and richness, pecans for flavor and texture, and a direct application of autumn spices with orange to tie the seasonal theme.

For the Pâte Sucrée (Base Crust)

  • 250g plain flour: structure
  • 120g cold unsalted butter: shortness and flavor
  • 50g icing sugar: fine texture
  • 1g salt: balance
  • 1 large egg (about 55g): binding
  • 15ml cold water: hydration

For the Pecan-Orange Frangipane

  • 100g raw pecans: nut base
  • 80g granulated sugar: sweetness and structure
  • 60g unsalted butter, softened: fat for creaming and aeration
  • 2g orange zest: aromatic
  • 1g ground cinnamon, 0.5g clove, 0.5g nutmeg: spice blend
  • 1g salt: balance
  • 1 large egg (about 55g): set and emulsify
  • 20g plain flour: stabilizer
  • 25g whole milk: texture

For the Mascarpone Cream

  • 250g mascarpone: body and tang
  • 60g double cream: aeration
  • 40g icing sugar: sweetness
  • 1g vanilla bean paste: aromatic

For Assembly and Glaze

  • 1 egg yolk + 15ml milk: color and finish

Instructions

Step 1: Prepare Pâte Sucrée

Combine flour, salt, and icing sugar in a food processor. Pulse to blend. Add cold butter. Pulse until the mix looks like fine breadcrumbs—the butter coats the flour, inhibiting gluten and ensuring tenderness. Add egg and cold water; pulse until clumps form. Turn onto a bench, press together with a scraper, then flatten into a disk. Wrap. Chill at least 2 hours (overnight preferred). This resting allows flour to hydrate and gluten to relax, which prevents shrinkage.

Step 2: Make Spiced Pecan Frangipane

Toast pecans (100g) in a dry skillet over medium heat until fragrant (5 min). Cool. Process with 20g of the sugar until finely ground—do not over-process, or you will get pecan butter. In a stand mixer, cream softened butter (60g) and remaining sugar (60g) with paddle on medium for 2-3 minutes. The goal is to beat air into the mixture and dissolve sugar. Add orange zest and spice blend; mix in. Add ground pecans; mix to combine. Add egg; beat until fully emulsified and lightened. Scrape often. Add flour; mix to combine. Add milk; mix until smooth. Frangipane should be spreadable, not runny.

Step 3: Roll and Shape the Crust

Remove pâte sucrée from fridge. Rest 10 min at room temp. Roll to a 3mm thick round, about 32cm diameter, between two sheets of parchment. If dough cracks, let it soften slightly—cold fat resists stretching. Transfer dough (on parchment) to rimmed baking tray.

Step 4: Assemble the Crostata

Spread frangipane evenly in a 22-24cm circle, leaving a 5cm border. Fold the edges over the filling, pleating as needed. The exposed filling should be visible. Chill assembled crostata 30 min. This prevents excess spread in the oven.

Step 5: Glaze and Bake

Preheat oven to 180°C (fan off). Mix egg yolk and milk. Brush crust only. Bake 38–42 minutes, until crust is golden and filling puffs/set. Frangipane should not wobble in the center but may appear slightly moist. If edges brown too fast, shield with foil. Cool 15 minutes on tray, then transfer to wire rack. Cool completely before topping.

Step 6: Prepare Mascarpone Cream

In a stand mixer, beat cold mascarpone, double cream, icing sugar, and vanilla bean paste with paddle on medium for 1–2 minutes. Stop before it becomes dense or grainy—overbeating breaks the emulsion.

Step 7: Finish and Serve

Spread or pipe mascarpone cream over cooled crostata, leaving some frangipane exposed. Garnish with extra pecan halves or curls of orange zest if desired. Serve at room temperature.

Pro Tips

  • Use cold butter and chill dough to prevent shrinking and promote flakiness.
  • Cream butter and sugar thoroughly for both crust and frangipane—aeration is critical to texture.
  • Chill the assembled crostata before baking to maintain structure and avoid collapse.

Troubleshooting

Crust cracks when rolling? Let it warm 5 more minutes. Too cold and the fat is brittle.

Mascarpone cream turns grainy? Overmixed—add a splash of cream and mix gently to re-emulsify. If still grainy, start over.

Frangipane oily after baking? Butter or nuts were under-creamed or over-processed; mix until just emulsified, not greasy.

Variations

  • Substitute walnuts or hazelnuts for pecans.
  • Add 30g chopped dark chocolate to frangipane for bitterness.
  • Infuse mascarpone cream with a splash of amaretto for extra aroma.

Storage

Assembled crostata keeps refrigerated, loosely covered, for 2 days. Bring to room temperature before serving. Mascarpone cream must remain chilled and should be consumed within 48 hours. Crust texture is best on the day of baking.
