What Makes This Special
This strudel combines Dutch choux pastry technique with a slow-baked, sage- and lavender-infused pumpkin cream. The use of choux rather than traditional strudel dough produces a crisp, hollow structure. Sage adds an autumnal herbal note, while lavender is used for its aromatic, slightly floral volatility, highlighted by the relative subtlety of pumpkin. Orange color references Halloween.
Ingredients
Each ingredient has a structural or aromatic purpose. Choux pastry must hold its shape and remain hollow. Pumpkin cream must be spreadable but not runny.
For the Choux Pastry Shell
- 120 g unsalted butter: For richness and structure.
- 250 ml water: Hydrates flour, generates steam for rise.
- 3 g fine salt: Balances flavor, strengthens gluten.
- 10 g granulated sugar: Assists browning, sweetness.
- 150 g bread flour: Higher protein for structure.
- 4 large eggs (approx. 210 g): Emulsifies, sets structure.
- 1.5 g dried culinary lavender: Gently infused in water for subtle aroma.
- Orange gel food coloring: For Halloween color.
For the Pumpkin-Lavender-Sage Cream
- 400 g pumpkin puree (see instructions): For body and color.
- 100 g mascarpone cheese: Creaminess and stability.
- 80 g caster sugar: Sweetness without graininess.
- 1.5 g ground cinnamon, 1 g ground nutmeg: Warmth and depth.
- 1.5 g dried lavender, 5 g fresh sage leaves: Infuse aromatics.
- Zest of 1/2 orange: Lifts aroma, references color.
Instructions
Step 1: Slow-Bake the Pumpkin
- Preheat oven to 160°C (fan). Cut a sugar pumpkin or butternut squash in half, scoop seeds, place cut-side down on lined sheet. Bake 60–80 minutes until deeply soft (knife slides through easily).
- Scoop flesh, mash or blend until smooth. Weigh out 400 g for recipe. Baking drives off moisture for a denser, more flavorful puree.
Step 2: Infuse Lavender and Sage
- In a small saucepan, heat 250 ml water to 90°C (do not boil). Add 1.5 g dried lavender and 5 g chopped sage. Steep 10 minutes. Strain, discarding solids. Reserve infused water for choux. Infusion extracts volatile oils gently to avoid bitterness.
Step 3: Make Choux Paste (Pâte à Choux)
- Combine strained infused water, 120 g butter, 3 g salt, and 10 g sugar in a medium saucepan. Bring to a rolling boil. Remove from heat.
- Add 150 g bread flour in one motion. Stir vigorously with wooden spoon until smooth dough forms, pulling from sides. Cook over medium heat, stirring constantly, 2 minutes until a thin film forms on pan bottom. This gelatinizes starch for structure and dries dough.
- Transfer hot dough to stand mixer with paddle. Beat 2–3 minutes on medium to cool to 50–55°C; if you add eggs too hot, they scramble.
- Beat in eggs one at a time. Wait for each to fully incorporate before adding the next. The finished paste should be smooth, thick, and form a deep V-shape when lifted with a spatula. Add orange gel coloring now; mix for even color. If paste is too thick/dry, add a little beaten egg or water. If too runny, it will not hold shape.
Step 4: Pipe and Slow-Bake the Choux Shell
- Transfer choux paste to piping bag with large round tip. On parchment-lined baking sheet, pipe a large rectangle (approx. 30 cm x 10 cm), building up 2 layers to create a hollow log. Smooth seams with wet finger.
- Bake at 170°C (fan) for 30 minutes to set structure and initial rise (steam causes hollowing).
- Reduce oven to 130°C (fan). Bake a further 50–60 minutes until thoroughly dry and crisp, light golden. Do not open oven during first 30 min; collapse risk. Slow baking ensures low moisture and extended crispness.
- Cool fully on rack.
Step 5: Prepare Pumpkin-Lavender-Sage Cream
- In small saucepan, combine 400 g baked pumpkin puree, 80 g caster sugar, 1.5 g dried lavender, 1.5 g cinnamon, 1 g nutmeg, zest of ½ orange. Cook over low heat, stirring, until mixture thickens and lavender is aromatic but not overpowering, 6–10 minutes.
- Remove from heat. Cool to room temperature. Sieve to remove lavender if desired.
- Fold in 100 g mascarpone until smooth. Chill until ready to fill.
Step 6: Assemble the Strudel
- With a sharp serrated knife, slice top third off baked choux shell (lengthwise) to create a lid.
- Spread or pipe pumpkin cream evenly in hollow base. Replace choux lid.
- Dust with powdered sugar and scatter extra lavender buds if desired.
Pro Tips
- Choux paste consistency is critical. Too stiff: no hollow; too loose: shell spreads and flattens.
- Do not open the oven early. Loss of steam causes collapse.
- Slow-baking pumpkin and choux shell removes excess water, preventing soggy structure.
Troubleshooting
Shell collapsed? Paste likely too wet or oven opened too early. Ensure precise egg addition and resist early inspection.
Pumpkin cream too runny? Pumpkin not baked long enough to drive off water; cook down on stovetop to thicken before adding mascarpone.
Variations
- Replace sage with rosemary for a piney aromatic note.
- Use sweet potato in place of pumpkin for a different orange base.
- Add toasted pumpkin seeds for texture in the filling.
Storage
Keep assembled strudel chilled, loosely covered. Best within 24 hours. Choux shell can be baked and stored airtight for 2 days before filling.
