Step 2: Prepare the Dough Sponge

Dissolve yeast (16g fresh or 7g dry) and 1 tbsp sugar in 120ml lukewarm milk. Add 100g bread flour and mix to a loose batter. Cover and let rise 30 min until bubbly.

Step 4: Bulk Fermentation

Transfer dough to a greased bowl. Cover with plastic wrap, proof at room temperature for 2 hours or until doubled in size. For best flavor, chill dough overnight (optional but enhances complexity).

Step 5: Shape & Proof the Rolls

Turn dough onto a lightly floured surface. Divide into 12 equal pieces (approx. 85g each). Flatten each to a 12x15cm oval. Pipe a thick ribbon of chilled pastry cream down center of each oval. Roll up tightly, pinch seam. Place seam-down in greased pastry rings (or muffin rings) on a lined baking sheet. Cover loosely and proof 1–1.5 hours until puffy and nearly doubled.

Step 6: Blind Baking the Cream-filled Centers

Preheat oven to 175°C (fan) or 185°C (conventional). Cut small circles of baking paper to fit over the cream-exposed tops (to prevent over-browning). Very gently, set a tablespoon of pie weights or dried beans over each papered center—this keeps the cream flat and prevents dough doming during baking.

Bake rolls for 18 minutes, then carefully remove pie weights and baking paper. Continue baking 7–10 minutes more until deeply golden and glossy. Rolls should sound hollow when tapped, and cream should be set but still slightly wobbly.
