A sun-kissed, picnic-ready Indian breakfast braid blending classic paratha with fresh blueberries and aromatic cardamom.
What Makes This Special
This vibrant paratha braid is a playful twist on a classic Indian breakfast, blending the sunny flavors of summer blueberries and fragrant cardamom in a form that’s perfect for sharing. The easy one-bowl dough comes together in minutes, while the beautiful braided shape makes it a picnic showstopper—just slice and share! Chilling the dough allows for a flaky texture and easier braiding, so even beginners can master this crowd-pleaser.
Ingredients
All the ingredients are combined in one bowl, keeping prep simple and tidy. Yogurt and milk enrich the dough, while blueberries add sweet bursts of flavor. Cardamom and lemon zest infuse a classic Indian aroma with a summery twist. A touch of honey enhances the fruit and keeps the loaf moist.
For the Braided Paratha Loaf
- Whole wheat flour (atta): The base, giving the loaf its nutty, hearty character.
- Yogurt & milk: Add softness and slight tang, typical to Indian breads.
- Oil: Keeps the dough supple and moist.
- Sugar & salt: Enhance flavor.
- Cardamom & lemon zest: Aromatic, fresh, and summery.
- Baking powder & baking soda: Give lift, ensuring a tender crumb.
- Blueberries: The star—juicy, seasonal, and picnic-perfect.
- Cornstarch: Absorbs blueberry juices, preventing sogginess.
- Honey: For gentle sweetness throughout.
Instructions
Step 1: Prepare the Dough
Add the flour, sugar, salt, cardamom, baking powder, and baking soda to a large bowl. Make a well in the center and add yogurt, warm milk, and sunflower oil. Mix with a spoon or your hand until a rough dough forms. Knead gently in the bowl for 2–3 minutes until smooth. (Don’t overwork; a soft dough is best.)
Step 2: Chill the Dough
Cover the bowl with a kitchen towel and chill in the fridge for 30–45 minutes. Chilling firms up the dough, making braiding easier and giving the paratha a flakier texture.
Step 3: Prep the Blueberry Filling
While the dough chills, gently toss blueberries with cornstarch, honey, and lemon zest in a small bowl. This ensures the juices thicken slightly during baking, avoiding leaks.
Step 4: Roll and Fill
Remove the dough from the fridge. On a lightly floured surface (or parchment), roll it into a rectangle about 30 x 18cm. Spread the blueberry mixture down the center third of the rectangle, leaving the sides clean.
Step 5: Braiding Technique (The Star Step!)
Using a sharp knife, cut 8–10 angled strips on each long side of the dough, about 2.5cm wide—do not cut into the filling. Starting at one end, fold the strips alternately over the filling (right, then left), overlapping to form a braid. Tuck in the ends neatly.
Braiding Tips:
- Keep strips even for a regular braid.
- If blueberry juices seep out, simply fold them back in gently.
- Work briskly if it’s warm—if dough softens, chill for 10 minutes and resume.
Step 6: Final Chill
Transfer the braid, seam-side down, onto a baking tray lined with parchment. Brush lightly with oil, cover, and chill for 20 minutes. This helps set the braid and prevents spreading.
Step 7: Bake
Preheat oven to 190°C (fan 170°C). Bake for 22–28 minutes until golden brown and the braid looks set. If browning too fast, tent with foil for the last 5 minutes.
Step 8: Finish and Serve
Brush immediately with melted ghee or butter for shine and extra flavor. Cool for 15 minutes before slicing—perfect for a potluck picnic!
Pro Tips
- Chill for Success: Chilling the dough before and after shaping makes braiding easy and prevents a sticky mess.
- Even Braids: Use a ruler or your finger to guide even strips for a beautiful, uniform look.
- Flavor Boost: Sprinkle extra cardamom or a pinch of lemon zest over the braid before baking for extra aroma.
Troubleshooting
Dough too sticky? Add a little flour (1 tbsp at a time) when kneading and chilling, but don’t overdo it—dough should remain soft.
Blueberries leaking? Make sure to coat them well with cornstarch; if leaks happen, it’s still delicious—just fold juices back in and continue.
Variations
- Mango Lassi Braid: Replace blueberries with diced, ripe mango and add a hint of saffron to the filling.
- Nutty Braid: Sprinkle chopped pistachios or almonds over the filling for crunch and extra flavor.
- Spiced Chai Version: Use a chai spice blend instead of cardamom and add a handful of raisins for a classic touch.
Storage
Store cooled slices in an airtight container at room temperature for up to 1 day, or in the fridge for up to 3 days. Refresh in a warm oven for 5 minutes before serving. This braid also freezes well (wrap tightly), making it perfect for advance potluck prep!
With just one bowl, a braid, and some summer sunshine, you have an eye-catching, crowd-pleasing Indian breakfast treat ready to delight any picnic or potluck table.
