Instructions
Step 1: Mix and Rest the Dough
Put flour, melted butter (50 g), egg, water, and salt in a large bowl. Mix with a wooden spoon until a rough dough forms. Knead in the bowl for 3-5 minutes until smooth and elastic. The kneading develops gluten for stretch. Cover with a damp towel and rest at room temperature, 30 minutes. This relaxes the gluten, making stretching possible later.
Step 2: Prepare the Filling
Add chopped apples, hazelnuts, brown sugar, sultanas, cinnamon, nutmeg, breadcrumbs, and lemon juice to the same bowl. Toss well. The sugar and salt will draw moisture from the apples. Breadcrumbs absorb excess liquid to prevent soggy pastry. Let this sit while dough rests.
Step 3: Shape and Fill
Heat oven to 170°C (fan) or 180°C (conventional). On a parchment-lined tray, dust a little flour. Place rested dough in the centre. With floured hands, stretch and pull the dough outward from the centre, working carefully until you have a rectangle about 30x40 cm. The dough should be thin enough to see shadow through it—thicker will bake, but texture is affected.
Spoon filling in a line 5 cm from one long edge, leaving 3 cm at each short end. Fold short edges over the filling (to seal), then roll the long side up around the filling, using the parchment to help lift and roll tightly. Place seam side down on the tray.
Step 4: Bake Slowly
Brush the top with melted butter. This helps colour and crisp the crust. Bake for 40 minutes at 170°C (fan), then lower to 150°C and bake 20 minutes more. Slow finishing bake drives off fruit moisture, setting the structure without burning. Strudel is done when golden and crisp, and a skewer inserted in the centre meets little resistance.
