What Makes This Special

These are Lebanese-style bagels (ka’ak-ish), blended with apple and a copper-hued autumn spice blend, given a distinctive lightly crisp crust via the blind baking method, which is unusual for bagels and emphasizes the contrast of interior crumb and exterior shell.

Ingredients

Bagels are typically boiled then baked; here, blind baking introduces a crisp, even crust for a visual and textural autumn contrast. The apple adds moistness and a seasonal, subtle sweetness, counterbalanced by spices. The spice blend is designed to bring warmth and coppery color, as well as a flavor profile in-line with autumn and Lebanese baking.

For the Dough

  • 500g strong white bread flour: For gluten development and chew.
  • 60g finely chopped apple: For moisture, aroma, and a hint of sweetness.
  • 250ml warm water (38°C): For yeast activation and dough hydration.
  • 2 tsp fine sea salt (10g): For structure and balance.
  • 2 tbsp honey (30g): Traditional in ka’ak; helps yeast and browning.
  • 7g instant dried yeast: Leavening agent.
  • 2 tbsp olive oil (30ml): Adds tenderness to the crumb.
  • 1 tbsp autumn spice blend: Warming spices and copper color.
  • 1 tsp ground mahleb: Optional, traditional in Lebanese baking.

For Boiling and Topping

  • 2L water + 1 tbsp molasses: Gelatinizes crust; color.
  • 1 egg, beaten: Shine and improved crust adhesion.
  • Sesame seeds + copper-colored spice topping: Traditional and seasonal finish.

Instructions

Step 1: Mix the Dough

Combine flour, salt, spice blend, mahleb (if using), and yeast in a large bowl. Mix. Add water, honey, and olive oil. Stir until a shaggy dough forms. Add apple. Knead in the bowl for 8 minutes: the dough should be smooth, elastic, and slightly tacky.

Why: Mixing thoroughly ensures even yeast and salt distribution. Kneading develops gluten, so the bagels have structure and chew.

Step 2: First Proof

Cover the bowl and leave at room temperature for 1 hour, or until doubled in size.

Why: Yeast fermentation develops flavor and gas pockets. The dough must rise to become extensible enough for shaping.

Step 3: Shape Bagels

Punch down the dough. Divide into 8 even pieces (approx 80g each). Roll each into a 20cm rope, then form a ring, pinching ends to seal. Place on a parchment-lined tray.

Why: Forming a tight ring is critical to a uniform crumb and for holding up to boiling and blind baking.

Step 4: Second Proof

Cover and let rise for 20-25 minutes. Bagels should look puffy but not doubled.

Why: A short second proof gives the final rise and prevents them from deflating in the boil.

Step 5: Boil Bagels

Preheat oven to 220°C (fan off). Bring 2L water and molasses to a simmer. Drop bagels in, 2–3 at a time, for 45 seconds per side. Remove with slotted spoon and return to tray.

Why: Boiling gelatinizes the outer starch, forming the classic bagel crust that will further crisp in the oven during blind baking.

Step 6: Blind Baking

Lay a second sheet of parchment over the boiled bagels. Place a second tray on top, weighted with baking weights or dried beans, to press the bagels flat. Bake at 220°C for 10 minutes. Remove weights and top parchment. Brush exposed tops with egg wash, sprinkle with sesame seeds and copper-colored spice blend. Bake uncovered for another 8–10 minutes or until deep golden-copper.

Why: Blind baking (baking under weight/cover) flattens and crisps the crust, exaggerating contrast with the tender crumb and echoing the crisp-crumb effect of Lebanese ka’ak.

Step 7: Cool

Transfer bagels to a wire rack. Cool at least 20 minutes before slicing.

Why: Cooling allows the crumb to set, preventing gumminess.

Pro Tips

  • Weigh ingredients precisely; apples hold water, so do not exceed 60g.
  • Fully seal the bagel rings or they will unravel in the boil.
  • The copper spice blend is visual as much as flavor; omit sumac for less tartness.

Troubleshooting

Bagels burst at the seam in boiling? Seal the ends tightly and avoid over-proofing; loose seams open in water.

Bagels are dense? Underproofing or too little kneading; ensure dough doubles on first rise and is smooth.

Bagels stick to parchment in blind bake? Use parchment, not waxed paper, and oil it lightly if needed.

Variations

  • Swap apple for pear, keeping weight the same, for a different autumn note.
  • Use black sesame for visual contrast.
  • Add 30g chopped toasted walnuts for crunch.

Storage

Store bagels in an airtight container at room temperature for up to 2 days. Freeze, well-wrapped, for up to 1 month. Thaw and re-crisp in a toaster or hot oven.
