What Makes This Special
This cheesecake uses autumn apples cooked with spices as a middle layer, balances sweetness with acidity, and finishes with a whipped cinnamon cream that controls texture contrast and air content. The whipped cream is structural, not just topping.
Ingredients
Ingredients are grouped by function: the crust provides firmness, the filling is dense and creamy, the apple layer offers acid and spice, and the whipped cream gives lightness and aromatic contrast.
For the Biscuit Crust
- 200g digestive biscuits: Structure and mild sweetness.
- 90g unsalted butter, melted: Binds crumbs and hardens when cooled.
For the Cheesecake Filling
- 600g full-fat cream cheese: Main body; must be room temperature for smooth blending.
- 200g sour cream: Adds acidity and silkiness.
- 180g caster sugar: Sweetness and moisture control.
- 3 large eggs (approx. 170g): Binder and structure; room temp prevents curdling.
- 1 tsp vanilla extract: Aromatic.
- 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground cloves, 1/8 tsp ground allspice: Warm spice blend.
- 1/4 tsp salt: Enhances other flavours.
For the Spiced Apple Layer
- 2 apples (about 250g), peeled, cored, diced: Texture and tartness.
- 30g light brown sugar: Sweetness, caramel notes.
- 1/2 tbsp (7ml) lemon juice: Acidity to prevent browning and sharpen flavour.
For the Whipped Cinnamon Cream
- 250ml double cream, cold: Must be cold for maximum aeration.
- 20g icing sugar: Sweetens and stabilises.
- 1/2 tsp ground cinnamon: Warm note.
Instructions
Step 1: Prepare Crust
Line bottom of the springform pan with parchment. Crush digestive biscuits to fine crumbs (food processor or by hand). Combine crumbs with melted butter. Press evenly and firmly into pan base. Chill in fridge for 20 minutes. This sets the butter, binding the crust and preventing floating during baking.
Step 2: Cook Apple Layer
In a saucepan, combine diced apples, brown sugar, and lemon juice. Cook over medium heat, stirring, until apples are translucent but not mushy (about 5-7 minutes). Remove from heat. Spread apples on a tray to cool rapidly. This reduces water content and prevents soggy filling.
Step 3: Mix Filling (Whipping Focus)
In a large bowl, beat cream cheese on medium speed with paddle until very smooth, 2-3 minutes. Add caster sugar, beat one more minute until combined. Add sour cream, vanilla, salt, and all spices. Mix until uniform. Scrape bowl.
Whip eggs in a separate bowl until foamy (about 1 minute with hand mixer on medium-high). This incorporates air, lightening the final texture and ensuring a smoother set. Slowly add whipped eggs to cream cheese mixture, mixing on low until just combined. Do not overmix; over-whipping at this stage incorporates too much air, increasing risk of cracking.
Step 4: Assemble
Pour half of cream cheese filling onto biscuit base. Scatter cooled apple mixture evenly over surface. Pour remaining filling over apples. Smooth surface. Rap pan gently on counter to release large air bubbles. This evens the texture and prevents uneven baking.
Step 5: Bake
Preheat oven to 150°C (fan off). Place pan on middle rack. Bake 55-65 minutes, until edges are set but centre still wobbles slightly when gently shaken. Residual heat will finish setting proteins without overcooking.
Turn off oven. Open door slightly. Leave cheesecake inside for 1 hour to cool slowly. This gradual cooling prevents sudden contraction, which causes cracks.
Remove and cool to room temperature, then chill at least 4 hours (preferably overnight) to allow structure to fully set.
Step 6: Whip Cinnamon Cream (Whipping Technique)
Whip double cream, icing sugar, and cinnamon in a cold bowl. Start on low speed, then increase to medium-high. Watch closely: soft peaks hold their shape but tips droop. Stop at this stage for spreadable or pipeable consistency. Over-whipped cream turns grainy and may split; under-whipped cream collapses.
Spread or pipe cream over cold cheesecake before serving.
Pro Tips
- For best whipping, chill bowl and whisk in fridge 10 minutes before use; cold tools ensure stable air bubbles and prevent premature melting.
- Use room temperature dairy for filling. Cold ingredients do not blend smoothly and can cause lumps or curdling.
- Use a sharp, thin knife to cut, wiping between slices for clean edges.
Troubleshooting
Crack on top after cooling? The cheesecake cooled too quickly or was overbaked. Cool in oven with door ajar and bake only until centre wobbles.
Grainy whipped cream? The cream was over-whipped. Whip only to soft peaks; if overdone, fold in a tablespoon of additional cold cream to loosen.
Soggy base? Apple layer was too wet or crust was not chilled. Cook apples until most liquid evaporates and chill crust thoroughly.
Variations
- Use pears or firm plums instead of apples; adjust cooking time to suit fruit texture.
- Add 30g toasted chopped pecans to crust for extra warmth and crunch.
- Replace some cream cheese (up to 150g) with mascarpone for a silkier filling.
Storage
Keep covered in fridge up to 5 days. Whipped cream can be piped before serving or stored separately. Do not freeze; texture will suffer.
